
Our Commitment
We source vinegar, salt, and sugar from all over Japan, and after repeated trials to find the perfect balance of ratio, we use two types of sushi rice: red vinegar and rice vinegar, which are used depending on the ingredients. We understand the background of the ingredients, and while being modest in our dedication, we express the exquisite original aroma, lingering aftertaste, and energy of the ingredients in our sushi.




The interior
with solid cypress planks, sikkui plaster, earthen walls, shitomido, and floor is modeled after Kyoto temples, while the carefully crafted rammed earth walls create a tranquil space that embodies traditional Japanese aesthetics. Flower vases and plates are by contemporary artists from Miyazaki, Nara, and all over Japan, and over 100-year-old boxes inherited from the family are also used as utensils.

Having spent youth time in various countries, discovered longing for Japan's special traditions and entered the world of sushi. He gained experience at three-star restaurants in Ginza, as well as star-ranked restaurants in New York and Hong Kong. As a Japanese person captivated by the profound charm of Japanese culture, he now conveys the appeal of sushi.
